DiSalvo's Limoncello Recipe

 

You will need 20 lemons peeled and with no pith.

It is very important to remove any white pith and use only the peel.

Try to use lemons that are close to perfect.  No blemishes.

2 bottles of 80 proof UNFLAVORED vodka. The cheaper the better.
4 cups of water
4 cups of sugar

Wash and dry lemons and remove peel. Try to avoid pith. Results will be better.
Cover the peels with the vodka and seal container. Leave the container in a cool dry place for at least 2 weeks. The mixture can be left for up to 2 or 3 months. The longer it is left alone, the better the product. Every couple of weeks, swirl the peels.

Mix the sugar and water in a saucepan and bring to a boil. Stir until the mixture is clear. Let the syrup cool. Mix the syrup with the lemon/vodka mixture. Let it sit for a couple of weeks.   (Friends of ours have made this and let it steep for 9 weeks in a curing crock with outstanding results).

Strain the peels from the liquid.

Press the peels to remove oil and all liquid from them.

Stir the remaining liquid with a clean spoon and transfer it into containers (mason quart jars work well) and seal.

For best results, store limoncello in the freezer before use.
